DIWALI SPECIAL : (PART 3- PAKKAVADA)

Pakkavada also known as ribbon pakkavada (due to its distinct shape) is a very popular Kerala snack item, its a perfect crunch and crisp snack.


INGREDIENTS:


Rice flour                                              1 cup (roasted)
Besan/Gram flour                                 2 cups
Chilli powder                                         1 tsp
Pepper powder                                     1/2 tsp
Turmeric powder                                   1/4 tsp
Hing/ Kayam/Asafoetida powder          1/2 tsp
Curry leaves                                           2 sprig
Melted butter/ghee                                1 tbsp
Water                                                     1 1/2 cups
Oil          
Salt                                                        As per taste


INSTRUCTIONS:


1. Sieve the roasted besan flour and rice flour.

2. Take a bowl and mix the chili powder, turmeric powder, pepper, salt, asafoetida and ghee / melted butter.

3. Add this mixture into the flour, pour water little by little into the flour and knead it into a smooth dough.

4. Add oil into the pan and heat it.

5. Press the dough through the ribbon mould of the sevanazhi (idiyappam maker) directly into the hot oil in a circular motion. (Note: I have put a picture of sevanazhi for reference)

6. Fry the pakkavada until it's golden and then fry the curry leaves until it is crispy.

7. Mix curry leaves with the pakavadas. And your snack is ready!
